This dish is simple and refreshing and can be served as a side dish or main course.
1 + 1/2 cups chickpeas (already soaked and rinsed)
1 handful fresh baby spinach, chopped
1/2 an avocado, diced
1 tbsp cold-pressed extra virgin olive oil
Juice of 1/2 a large lemon
Dill, sea salt, pepper, and garlic powder to taste
1. Toss all ingredients in a medium size bowl.
2. Refrigerate for one hour.
3. Serve, taste, love!
